This is an AWESOME RECIPE!
I found a recipe similar to this one, on a different blog (sorry, I don't know how to put the link to it on my blog, I apologize), but I tweaked it a little, to my families liking. It was so good and everyone ate it and even wanted leftovers for several days later.
Mexican Rice Plate with Chipotle Dressing
4 c. of cooked rice
2 pkg. taco seasoning (any brand will do)
Mix warm rice with seasoning and set aside, keeping it warm.
4 seasoned chicken breast (cooked the way you like, grilled, baked etc...
we used Rotisserie Chicken from Day's Market in Heber, yummy!)
Cube the chicken or cut it into pieces.
1 can re-fried beans
1 can black beans, drained and rinsed
1 can corn, drained
shredded lettuce
shredded cheddar cheese or whatever kind you like
sliced olives
fresh tomato's, diced
sour cream
tortilla chips (or strips), crumbled
Special Chipotle Dressing:
1 c. homemade ranch (can used bottled, but homemade is always better)
10 shakes of any kind of hot sauce (we used Franks)
1/2 t. cumin (can't leave out!)
a few squeezes of lime juice (fresh or bottled, adjust the ingredient to your taste)
Heat re-fried beans. In another sauce pan heat black beans and corn. While all the ingredients are heating, combine ingredients for dressing.
This recipe is a "layer your own" kind of recipe. Some of my family put their food in a
bowl, layering it, and some of them layered it on a plate. It works great either way. Begin layering with the re-fried beans, cheese, rice, chicken, lettuce, tomato's, olives, black beans/corn mixture, a little bit more cheese, tortilla chips and Special Chipotle dressing.
This has become a family favorite and I am sure we will make it many times to come! Let me know if you try it and how you like it.
